This 2 day class is suitable for those who want to take their hobby baking into a professional level.  During this class you will gain the confidence and knowledge to create a four tiered contemporary wedding cake from scratch. Begin your wedding cake baking journey with us!  

Wedding Cake Basics

You will learn:

    • How to perfectly bake a sponge cake.

    • How to make and flavour your own buttercream icing

    • How to make chocolate ganache and the different ways it can be used in cakes

    • How to make strawberry jam.

    • The different techniques and methods used to torte, fill and level your cake

    • How to coat your cake in ganache smoothly and how to prepare your cake for covering in sugar paste

    • How to cover your cake in sugar paste and achieve sharp edges.

    • How to cover a double barrelled cake

    • How to make wafer paper ruffles

    • How to correctly stack a wedding cake


All equipment, ingredients and recipes will be provided for your cake class.  We will also supply you with some beverages throughout the day.
